
Any baker knows, you have that magic moment when your dough is twice the size it was; it’s time. Lodge Bread now has an indoor dining room, doubling the seating capacity that was once all patio. The famous sourdough base that turns into baguettes, scones, croissants and cardamom knots has expanded.
The gold standard at Lodge Bread has always been it’s exceptional, excellent sourdough. Twice nominated for a James Beard Award, Or Amsalam has used this to create baked goods that have a unique, layered flavor profile. “Making a sourdough croissant is a real challenge,” Amsalam offered, “but it is possible.” Having cracked the code, they have multiple delicious versions; Plain, chocolate, almond, ham and cheese. Both the sweet and the savory have that bottom note of balance, that ideal foundation. Like the whisper of orange zest in the huge (and hugely popular) cinnamon roll, the tangy note of sourdough plays through all the rich buttery pastry, keeping it in balance.
Not just possible, but maybe even preferable – folks who are gluten-challenged can eat without side effects. It’s sourdough.
There’s a lot more than pastry – a full menu of breakfast and lunch option, sandwiches, salads and even shakshuka – can fill the space on one of those new tables very quickly. While shakshuka was not on the original menu, Amsalam said it was his father’s favorite breakfast, and it was a much appreciated ‘special’ until it became standard fare. Too many restaurants serve shakshuka with bland tomatoes and undercooked eggs. Here, the zip of the spicy vegetables make a great background for eggs well-done-but-not-overdone. Think of it as Goldilocks shashuka – just right.
Arthur Sherman, who has been on board with the bakery on the management side since 2022, began as a happy customer. “I just thought it was really good bread.” He has helped cultivate the bakery as workplace that takes care of their people. Both Amsalam and Sherman emphasized, “What you put out into the community is what you get back.”
Open for breakfast and lunch, ten years of serving in Culver City have also seen Lodge Bread open new locations in Beverly Hills, and Woodland Hills, as well as a planned opening in Pasadena next year.
